I canoe solo all the time, and I don't do any of these things. I sit in the seat and keep the boat flat and pointed in the normal direction. I do, however, use a kayak paddle.
@ganley - I think this is only one way of doing it. I am with you in that I prefer to sit in the seat. Personally, I think kneeling in a canoe for several hours would be incredibly uncomfortable.
