Sorry but the is not a SHTF worthy post. The simple fact they need marine plywood (WTF do you find that?) eliminates this. Plus all the other items that would be in short supply if such an even were to happen.
With that in mind, while it isn't as simple or cheap, I think I'd prefer to take this route: http://offermanwoodshop.com/ows-canoes/ (If I ever do get to this project, I will be sure to link it here... Reading your reply above lead me down a mental path and this is where I ended up. I've helped a friend make his third and fourth canoes and it kindled a love for the craft.)
